Week one at Pastry School!!!





My uniform!!! I feel like a Pastry Chef Already!!!
My expectations of my first week at school was alittle overwhelming. I had been out of school for along time and I didn't know what to expect..  I went in there willing to learn and to undo some of the skills and techniques I had practiced in my kitchen.  This was the BIG league to me. So I was ready to put my knowledge aside and learn from the BEST..

This is my experience at pastry school. I'm not doing this to hurt anyone, I just want to share my experience. And I hope I inspire someone to follow their DREAMS!!!


Pie shell is made up of sweet dough, filled with lemon cream!!
Final dessert L' Exotic!!Made Sweet Dough,Lemon Cream, Almond Cream, Exotic Compote,Almond Streusel, AMAZING!! This dessert had so many elements of flavors and taste.. You had the crunch for the crust, then layed with the cream, topped with exotic compte which was pineapple, lime juice, orange juice, vanilla bean, brown sugar, mango, banana!! OMG!! Sprinkled with powdered sugar!!!

Recap of my journey at Notters School of Pastry Arts!!

Let me start at the beginning I came to Florida with my Pastors to help build a new church and to further my dreams of becoming a pastry chef. Here's some pictures of me winning second place cupcake contest held at Notters... The cupcakes might not look like a million dollars but they earned me a scholarship for $1000.00. I had the pleasure of meeting Marina Sousa, who has won several Food Network challenges.. And Chef Ewald Notter expert in Chocolate and Sugar... this has truly been a exciting ride... This all happened with the push of my life coach, and mentor Dr. Stacia Pierce at lifecoach2women.com. Well enough of me!!! Here's the pictures

Let's Bake!!!


When you begin cake decorating, you can get by with a heavy duty mixer, tips, pastry bags, cake pans, ready made or  homemade royal icing, mixing bowls, spatulas, and metal spatulas. Later on you will want to increase your inventory for cake decorating and baking supplies.

Here's a list I created to get you started:

Rolled Fondant Icing -  premium quality, non-stick, icing that pliable and can be rolled out for cake decorating with a rolling pin or  sheeter. This Fondant produces a satin smooth and elegant finish on cake. Can be used as a modeling paste to create flat, 3-D pieces for your cake.

Buttercream Icing - Here's a quick and easy recipe for Fluffy Buttercream Frosting:

  • 1 cup butter, softened
  • 6 - 7 cups confectioner's sugar (pure), sifted
  • 6 - 8 Tablespoon half and half cream
  • 2 teaspoon vanilla
  • 1/4 teaspoon salt
Preparation;

Cream butter until very fluffy. Add part of the powdered sugar and salt and whip again. Continue adding sugar and half and half in small amount, alternate. whip until fluffy. Stir in vanilla

Hexagon Cake Pan - 16 gauge anodized aluminum, straight sides, hemmed rim for durability, even wall thickness. Wedding Cake Set, Round Cake Pans Sets, Oval Cake Pan Sets,
